NOSTALGIC: Birds Nest Easter Desserts

Every Easter since I can remember, my Grandma always made a Bird’s Nest Cake for dessert. For the first Easter in a long time I’m without family  for the holiday and was feeling a little nostalgic, so I decided to pay homage to my Grandma and whip up some mini Bird’s Nest Cakes similar to her recipe.

Having recently acquired a doughnut pan on amazon.com during a bout of insomnia induced online shopping, I decided to put my purchase to good use and bake my mini "nests" with the new pan. I used devil's food cake mix for the cakes. Once cooled, I frosted them with homemade chocolate ganache frosting (yummy!), sprinkled the ganache covered cake with the green colored colored coconut "grass", and topped with Cadburry Mini Chocolate Eggs to complete the look. I think they They turned out super cute and I can't wait to share them with my guests tonight.
